#3 Spaghetti Bolognese



Spaghetti Bolognese comes rather high on our comfort food list. It is incredibly wholesome and simply makes you happy. The meat sauce is mildly spiced and is a beautiful contrast against the white spaghetti. Although this recipe takes a little time to prepare; the actual work involved is minimal.

You simply get all you ingredients together - mince; you could use any mince, but we prefer mutton for this recipe. Tomatoes, tomato puree, onions, garlic, some dry spices, chili, stock, oil and noodles.



You then want to fry your onions and garlic till they are beautifully golden. Pop in the mince, and finally the tomatoes, tomato puree and chili. Cook this mixture for just a couple of minutes.



You then add the stock, and pretty much forget about the sauce. All you need to do is stir it every now and then. Its that simple!

Ingredients

  • 500g Mutton, minced
  • 300g Spaghetti
  • 200ml Tomato Puree
  • 2 medium sized Tomatoes, finely chopped
  • 4 large Onions, finely chopped
  • 10-12 cloves Garlic, finely chopped
  • 2tsp Red Chili powder
  • 2inch stick of Cinnamon, ground
  • 5 Cloves, ground
  • 2 Cardamom, ground
  • 2 cups Stock
  • 4tbsp Oil

Heat the oil in a heavy bottomed pan. Add the onions and garlic and fry. When they reach the translucent stage, add the cinnamon, cloves and cardamom. Continue to fry till the onions are golden.

Add the mince and fry on a medium heat till it is pleasantly browned.

Pour in the tomato puree, the chopped tomatoes and the red chili powder.

Cook for a couple minutes stirring occasionally.

Add the stock and simmer the sauce for about 20-25 minutes, or till it has reached the consistency you desire.

In the meantime, cook your pasta and grate some cheese.

You could either have a bed of pasta and pour the meat sauce on top; or you could simply mix the pasta and sauce together. Either way, don't forget to add a generous sprinkling of cheese! Sluuurp
