#1 Hash Browns


Potatoes are an absolute must have in any kitchen. They are easy to cook and incredibly versatile. Hash browns are lovely for a number of reasons - they barely take any time to make, they are crispy and crunchy on the outside while somehow remaining fluffy in the middle.

Start with getting your main ingredient and equipment together - potatoes and a grater.


Grate the potatoes into a bowl and wash thoroughly with plenty of water. This is to get all the starch out.


You then want to dry the potato out completely. Squeeze the water out, and pat with a kitchen towel for double measure!


Now comes the fun part, add your spices and form into little patties. We added chili flakes, oregano and pepper. Traditionally one would only add salt and pepper; but we feel the spices give it an extra dimension. Some options are thyme, rosemary, coriander, red chili powder - practically anything that tickles your taste-buds! Fry till golden brown and make some faces smile!!


Ingredients

  • 2 large Potatoes
  • 1tsp, choice of Herbs and Spices
  • Salt
  • Clarified Butter (ghee)/Oil/Butter

Grate the potatoes and rinse thoroughly.

Squeeze out all the water and pat with a paper towel to ensure that the potatoes are completely dry.

Add your spices and salt and combine.

Form your hash browns by gently patting them into a round shape. You want them about 1/2 inch thick.

Put some clarified butter in a non-stick pan and gently fry the hash browns till they are golden on either side. This takes about 7 minutes on the first side and 5 minutes on the other.

Serve hot with some eggs!
